Attention all Wendish Cooks!

If you or someone in your family has ever made a casserole, soup, stew, or other type of dish that incorporates Wendish noodles, we want to hear about it! TWHS is gathering recipes for a Texas Wendish Noodle Recipes Cookbook. The cookbook, which will also include our traditional Wendish noodle recipe, will be a collection of recipes that call for using Wendish noodles in any way or combination.

Please send us your family’s recipe(s) by email or mail, or bring a copy to the museum. Include with your recipe(s) the following information:
• Name of submitter
• Contact information
• Wendish ancestral name(s)
• Name of the recipe
• Origin of the recipe (family tradition, new creation, etc.)

Recipes for the cookbook are to be submitted no later than September 1, 2017 to be included in our first printing.

The Texas Wendish Noodle Recipes Cookbook will make its debut at our 29th annual Wendish Fest on September 24, 2017. Thank you!

    Recipe for the Texas Wendish Noodle Recipes Cookbook:

    NOODLE BEEF CASSEROLE – Viola Domel Hobratsch

    3 c. cooked noodles 1/4 c. bacon drippings or fat
    1/2 c. diced celery 1/4 c. chopped onion
    1/4 c. chopped green pepper 1 lb. ground beef
    1/4 tsp. pepper 1 1/4 c. boiling water
    1 beef bouillon cube 1 1/2 tsp. salt
    1 c. tomato soup 1/2 c. buttered bread crumbs
    1/4 tsp. pepper

    Heat fat and add celery, green pepper and onion. Sauté until tender. Add beef and brown lightly. Dissolve bouillon cube in boiling water; add tomato soup and seasonings, and heat, stirring constantly until smooth. Combine meat-vegetable mixture, noodles, and soup mixture in greased 2 quart casserole, and top with crumbs. Bake at 350 degrees for 25 to 30 minutes. Makes 6 servings.

    This was my mother’s recipe that was handed down to her from her mother, Lydia Bethke Domel.
